English Muffin Breakfast Sandwiches
Ahh, breakfast. Who doesn’t love it, right!? It’s one of my favorite meals of the day, but here’s the catch…I don’t always eat breakfast at breakfast-time. ;) I’m one of those granola any-time-of-day or yogurt and fruit for dinner kind of girls. :) But, I married a man who LOVES breakfast and always like to have food when he leaves for work in the mornings! When we first got married, I panicked a little bit when I went grocery shopping for the first time, but it’s become one of my favorite things to do! Finding the sales, being creative, learning new things, it’s all so fun!
This is one of my favorite breakfast basics that I will make ahead of time and freeze, that way there’s a filling, protein packed, breakfast ready to go for those mornings that I just want a little extra sleep :) It’s my little spin on a breakfast sandwich! The best part!? You can make a dozen of them for under $5.00!
WinCo foods sells english muffins by the 6-pack for just $0.99! If you can’t find them there, Costco sells cinnamon raisin english muffins for $2.99 for a large pack! My man likes the cinnamon raisin ones, but sourdough ones are yummy too!
Then get yourself some eggs and turkey bacon, a little bit of peanut butter or butter! For the savory ones on sourdough, you can use mayo/dijon mustard too! Spread it on your english muffins, fry up some eggs and crisp up the bacon. Wrap up the sandwiches with foil and freeze! When you’re hungry or in a rush to get out the door, just pop one in the microwave to defrost for about 90 seconds, then heat up for another 90 or so, or until heated thoroughly!
